Ingredients:
- 2 zucchinis
- A bunch of fresh mint
- A handful of peanuts
- 2 tbsp of lemon juice (or balsamic vinegar)
- 1 tbsp of sesame oil (or olive oil, if using balsamic vinegar)
- Feta cheese to taste
Preparation:
- Chop the mint leaves and lightly crush the peanuts, mix the two in a small bowl, set aside.
- With a vegetable peeler, slice the zucchinis into ribbons and cut them to the desired width.
- In a large salad bowl, mix the sliced zucchinis, mint leaves and crushed peanut. Pour the vinegar and lemon juice (or balsamic vinegar and olive oil) over the mix.
- Sprinkle feta cheese over the mix to taste. Serve cold.
